You Will Need...
4 free-range chicken supremes (breast with wing intact)
10 french shallots, peeled (cut in half if large)
6 cloves garlic, peeled
3 long red chillies, sliced
Juice of 1 lemon
Zest of 1 preserved or fresh
lemon, finely chopped
2½ tbsp extra-virgin olive oil
4 sprigs thyme
4 sprigs oregano
How to Make...
Preheat oven to 200°C (180°C fan) and sear chicken in large pan, skin-side down, for 5-7mins or until
browned, then place in a large bowl. Add remaining ingredients, toss and transfer to a roasting tray. Bake for
15mins or until chicken is cooked through.
